Preparing Mauritian Poutous 

‘The Poutou’ which sounds more like a character in a Victorian novel is actually a delightful street food snack from Mauritius. It is a white rice cake cooked with grated coconut. 
Recipe for 20 Poutous 


180 g rice flour 

150 g grated coconut 

230 ml milk

100 g sugar

1 teaspoon vanilla

2 tablespoons softened butter

1/2 teaspoon yeast


Mix the melted butter with milk. Pour the mixture on the rice flour to make  dough. Add the remaining ingredients and mix using a spatula. The dough must be dry. Put the mixture into a greased mould and cook either in a microwave for 10 to 15 minutes or on a stove using a ‘Poutou’ steamer. And your Poutous are ready to be relished.
